Basic Guacamole:

Avocados (4)
Roma Tomato (2)
Juice of 1 Lime
Yellow Onion (1 small)
Fresh Cilantro (1/4 Cup)
Jalapeno Pepper (1)
Salt (to taste)

For the newbie vegans out there…guacamole was a life saver when I first gave up cheese.  It provides the yummy and creamy richness (fattiness) that you may miss and crave, without harming any animals.  I think I ate it 2-3 times a week for a month in the beginning!

Finely chop onion and slice and de-seed Roma tomatoes into small chunks.  Finely dice and de-seed jalapeno pepper.  Chop cilantro taking care not to crush leaves.  In separate bowl, mash avocado with fork leaving some chunks.  Add lime juice and stir.  Gently fold in onion, tomato, jalapeno and cilantro.  Salt to taste and serve.  Leave avocado pit buried in bowl and tightly cover with plastic wrap and refrigerate if not planning to eat immediately (yeah right!).
